Start with the product brief
Define the consumer, drinking occasion, flavor direction, package, serving size, shelf price, target cost, and intended channels. A useful brief also records ingredient preferences, restrictions, and the claims you hope to make. Give the development team clear priorities so trade-offs can be made deliberately.
Develop against the commercial model
A bench sample must eventually become a repeatable product on a production line. Review ingredient availability, target cost, processing needs, packaging compatibility, and sensory performance together. A formula that depends on a difficult ingredient or an incompatible process can create a manufacturing problem later.
Test the product in its real package
Plan the testing and documentation appropriate to the product and production process with qualified technical partners. Evaluate the intended shelf life and storage conditions. Agree on acceptance criteria and responsibilities before approving production. The right work depends on the formula and process; a taste test alone cannot establish shelf stability.
Connect formulation and co-packing
Bring manufacturing partners into the process before the formula is treated as final. Confirm line capabilities, batch size, ingredient handling, packaging formats, lead times, and changeover requirements. Agree on the finished specifications and the information required for a reliable handoff.
Claims and labels
Develop the label and proposed claims alongside the product. FDA and TTB requirements differ by product and operating model. Confirm the applicable requirements and supporting evidence with qualified specialists. Check the current regulator guidance rather than relying on a competitor’s package.
